Description of Binnai Nijihakko Sparkling TOYOKUNI 720m

It uses 100% of the contracted rice “Yumenoka” from Saitogawa Agricultural Products. In the secondary bottle fermentation the fermentation is performed twice in the bottle for about one month. The pressure in the bottle is measured and when it reaches 0.40MPA (20 ° C) it is put into a moving bottle (Lumiage) rotated little by little every day to collect the sediment in the bottle at the mouth of the bottle. After that we will move on to the colander (Degorgeman) work but here we will use the REC freezer to freeze the sediment gathered at the mouth and then pull out the iced dregs and restock it. Finally it is completed with a cork stopper and a wire. It can be stored at room temperature by pasteurization according to the regulations of the Awa Sake Association. It is made in the same way as French champagne. With a vanilla-like scent and a dry taste you can enjoy it as a toast drink as well as a regular drink. The sake is perfect for both Japanese and meat dishes. In 2009 the French sake competition KURA MASTER won gold in the sparkling standard category (over 10 degrees alcohol) and the 2019 SAKE COMPETITION won silver in the sparkling category.
